I was thinking about making enchiritos the other day, and am glad I found your recipe. I made it exactly as written, except that I used two jars of enchilada sauce instead of red chili sauce. I made it in a 13"x9" pan, and put some sauce on the bottom. Then I placed the folded enchiritos in the pan. I cooked mine at 350 degrees for 15 minutes instead of microwaving them. It was interesting to learn the technique of mixing seasoned ground beef with water in a skillet and breaking it up until it is a little mushy. It made a much better consistency for the filling than just sauteed hamburger. I'll use this method again when making tacos, etc. We used sour cream and green onions as toppings. These are so delicious, and I'll be making them again!

Most delicious! I added 2 pickled jalapenos to the meat mixture after tasting and baked it in oven.

Not only do I need to thank you for this awesome recipe, I need to thank you for the manner in which it's prepared. It was 89° here yesterday (Las Vegas). I definately didn't want to turn the oven on, and it was such a simple recipe, and absolutely delicious! There are just the two of us, so I used a half pound of hamburger, and just a little bit more than half on the seasonings. I had some shredded Jack and Cheddar cheeses, so that's what I used. It's a very forgiving recipe, so a little more or less on the spices isn't going to make a big difference. My husband makes a killer enchilada sauce, so I used that, and as you can see by my pictures, I used as lot of it, as we like sauce! Tom's Famous Enchilada Sauce I took a couple pictures and will get them in just a few. Thank you so much for this keeper, Little Bee, we will definately be making this a lot!

Eww I'm sure it might taste ok after being in the microwave but I would much rather throw it in the oven and not microwave any of it.

I'm really surprised at how much we liked this. DD & I LOVE Taco Bell, but DH isn't much of a fan. I did add about double the chili powder and paprika and used fresh onion and garlic. I also mixed the beans right in with the meat. I split the recipe between 2 pans so I could freeze one. I was able to fit 5 in each, with meat left over, so I mixed the sauce into the leftover meat and spooned that over the top. I really wasn't looking to duplicate the taste of TB enchiritos but I wanted something similar. This was better than the real thing, Thanks!

Wow, thank you! This is obviously a hit with the husbands! Enchiritos are mine's favorite, and last night he was so pleased. I put the left overs in his lunch today and he even sent me an email to thank me! So thank YOU for the recipe, and all the helpful reviews. I was able to make these with what I had on hand, except I used taco bell sauce. I had like a zillion packets. I highly reccomend trying them with Taco Bell sauce, a bottle of it is like a dollar.

I found it a bit bland, but that may have something to do with using ground turkey instead of beaf, I will kick up the seasoning next time. I really liked the texture the flour and water give it. Next time I'll add cheese to the tortilla roll and possibly black beans. This will become a regular meal for us I think because I can make a lot at once and freeze individual portions

This was a great recipe...and I was shocked when I figured out I never even had to turn the oven on! What...it is all microwavable...AWESOME! These were very good. I used la Victoria enchilada sauce since I could not find red chile (looks like a good idea based on the past reviews). We agreed that this would probably freeze well and may give that a shot next time! Excellent recipe. Thanks Little bee!

This method of cooking ground beef makes a mixture that definitely tastes like Taco Bell, only better (fresher). Based on the other reviews, I used enchilada sauce instead of chili sauce. I also did not add the onions, and used shredded colby-cheddar instead of all cheddar. A very good casserole.

Oh Yeah, these are great! I love how easy and quick they are to get to the table, and, as you say, Bee, with stuff a body usually has on hand. I used a good red salsa and it worked out fine. Thought your Over The Top Enchies were great, but, these hummers run neck in neck with 'em! Good stuff, Toots! Thanks for sharing. We'll be doing these again! Laudee

Yummy! This was pretty close to the real thing! We did not care for the red chile sauce but I will definately make this again and try enchilada sauce. Thank you for the recipe!
