Everyone loved this recipe! I used taco seasoning mix instead of the flour and seasonings and I topped the enchirito with chopped onions.........also used 1/2 cup chopped onion with the beef. I've never had this at Taco Bell so I don't know what there"s tastes like but I love canned enchilada sauce unlike some of the reviewers.

I liked this recipe a lot and I think it is certainly very close to the Taco Bell version. I did make the following changes: I used a packet of taco seasoning for the meat(instead of the salt, chili powder, onion flakes) and after cooking, added the beans right to the meat mixture. The enchilada sauce that I like to use is La Victoria. Thanks Swede16tc for posting!

I use this recipe if I'm in a hurry. but Todd Wilbur's "New Improved" recipe (Taco' Bell's Enchiritos #102163) creates the proper texture and is a closer approximation of the meat flavor. I agree with Chef #386324 that the canned enchilda sauce just doesn't compare to TB red sauce, but I'm not sure what Chef was looking at? Ingredient statement from Taco bell Red Sauce (first four ingredients) Water, Paprika, Modified Food Starch, Salt.... Taco bell Hot Sauce Packet ingredients(First four ingredients) Water, Tomato Paste, Jalapeno Peppers, Vinegar..

If you ask Taco Bell for a nutrition pamphlet they should give you one (if they have them). In that pamphlet they list the ingredients of everything they make. The main ingredients for their Enchirito Sauce are (in order): Tomato Paste, Water, Vinegar, Jalapeno Peppers and Onions. The ingredients of La Victoria Mild Red Enchilada Sauce are: Water, Red Chili Pepper, Dehydrated Chili Peppers, Modified Food Starch, Soybean Oil, Salt, Vinegar, Garlic and Spice. As you can see the two recipes are vastly different and hence La Victoria sauce tastes absolutely nothing like Taco Bell's Enchirito Sauce. My son loves Taco Bell Enchirito's but can't stand any of the canned enchilada sauces available at the grocery store. I am looking for a true Taco Bell Enchirito Sauce recipe that sinks up with their ingredient list, i.e. has mostly tomato paste followed by decreasing amounts of water, vinegar, jalapeno peppers and onions.

I loved this! Just like the Enchirito I used to buy all the time at Taco Bell! Easy to make and delicious! Even my finicky meat and potatoes only husband liked it!

This was a quick and easy Mexican meal, but was not terribly authentic tasting. However, neither is Taco Bell. Great Americanized Mexican flavor. I omitted the chopped onion, and placed the folded tortillas in a backing dish. I covered them with heated enchilada sauce and the cheese. I put them under the broiler on low for about 5 minutes. Overall, pretty good!
