T.d.f. Chicken Fajitas

  • Marinate chicken breasts in first 5 ingredients (lime juice, salsa, minced garlic, chili powder and cumin).
  • Wrap tortillas in stacks of 4-inch foil, heat in 350°F oven approx 10 minutes.
  • Meanwhile in in a large skillet over medium heat, heat oil (enough to cover bottom of skillet). Sauté onions that have been cut in strips and peppers that have been cut in strips until tender crisp approximately 3-5 minutes. Remove and set aside(keep warm).
  • Add marinated chicken with marinade mixture to skillet and cook through. Cut into strips. Combine with onions and peppers add salt and pepper to taste. Spoon mixture into tortillas and roll. Serve topped with sour cream, grated cheddar and salsa.

  3. These were so simple and absolutely the best fajitas I've ever eaten. The flavor is a cumin based taste. I marinated the chicken in the sauce over night and then basted them while grilling. FANTASTIC!!
     
  4. I just finished eating the leftovers for lunch. I think I liked them better. The toppings I used were lettuce, mexican 4 cheese, and salsa (my so called homemade salsa - plum tomatoes diced with red onion diced and package of Concord brand hot salsa mix of dehydrated spices.) I will use less lime juice next time (I squeezed it from one of those plastic limes) Thanks!

Hi it's fun to be part of RecipeZaar! I work full time and in my spare time I like to experiment in the kitchen. I also enjoy small hikes, biking and the outdoors.
