This quick stir-fry gets a head start by using leftover beef.

  1. Dissolve cornstarch in sherry, oyster sauce, water, and add red pepper flakes.
  2. In wok or large skillet, heat oil over medium high heat, add ginger and garlic.
  3. Stir-fry 1 minute.
  4. Add broccoli, stir-fry 3 minutes.
  5. Add green pepper, celery, and green onions, stir-fry 3 minutes.
  6. Make a well in wok and add cornstarch mixture.
  7. Stir until thickened.
  8. Add meat and gently stir.
  9. Add chicken broth if mixture is too thick.
  10. Serve with steamed rice.
