This is not fancy, but quick and easy. This is from my family cookbook. This goes great with fried ham and a salad.
- 2 -3 cups cooked rice
- 1⁄4 cup butter
- 1⁄2 cup carrot (finely choppes)
- 1⁄2 cup celery (finely chopped)
- 1⁄2 cup bell pepper (finely chopped)
- 1⁄2 cup green onion (finely chopped)
- Fix rice according to directions.
- melt butter in skillet.
- add veggies and cook over low heat to soften.
- add salt and pepper to taste.
- add veggies to hot rice.
