Swiss Steak Without Tomato

- 907.18 g round steaks, cut into serving pieces and pounded thin
- 118.29 ml flour, for dusting steaks
- 1 medium onion, cut in quarters and sliced
- 4.92 ml salt
- 4.92 ml pepper
- 44.37 ml vegetable oil
- 2 (609.51 g) can cream of mushroom soup
- 304.75 g can condensed beef broth
- 226.79 g sliced fresh mushrooms (optional)
directions
- Put flour, salt, and pepper in large ziploc baggie.
- Add pounded steak pieces and shake well.
- Do not remove from bag.
- In large dutch oven, heat oil over medium high heat until shimmering.
- Shake baggie to recoat steak pieces, shake each piece to remove excess flour, and add to skillet.
- Fry until browned on each side, approximately 2 minutes per side.
- (This will have to be done in batches. Remove each browned piece to a plate.).
- Add onions to dutch oven, cover and cook for one minute.
- Add soup and broth, stir well, add steak pieces, cover, and place in 325 oven for 90 minutes.
- If using mushrooms, add after 60 minutes and replace in oven.
- This makes a lot of gravy that doesn't usually have to be thickened and is wonderful on boiled or mashed potatoes.

My DH likes a stroganoff type swiss steak so I tried this recipe. I didn't quite have 2 lbs, just 3 large already tenderized steaks. I also put in the crockpot on high. This did make a TON of gravy that did not need thickening - which I like and I've frozen some for use later. I'll have to remember to come back and let you know how that turns out. The flavor was very good. My only complaint is that next time I won't dredge the steaks in flour first - maybe just sear in a bit of oil. All the flour came off and made floating flour thingies in the gravy which I didn't like. I don't have an immersion blender or I would have zapped the little buggers. Maybe the crock caused this? I will definitely make again though.

Perhaps, Vina, your response is to my posting -- but it took me years to find it! This recipe is exactly what I have been lusting for -- this was a family favorite and the recipe got lost (I don't think it was ever written down!) when the last of my mother's generation passed away. I am so grateful to you. This was a Mother's Day tradition at my cousin's in Arlington, WI -- now I revive it! You've made my day!

I live in Minnesota, and actually like the winter more than summer! (Must have Siberian ancestors!)
The main focus of my life is, and always has been, children. I've spent the majority of my life either educating myself about children, having and raising children, or working with children. I presently work in an elementary school with children that have emotional/behavioral difficulties, and have three daughters of my own.
I also have four grandsons (one an extra gift that came when my daughter very wisely married his dad) and will become Grandma to the the 5th baby in June. This one a little girl! I can not wait!! I received so much joy being a mother that finding that much joy, and more, in being 'Grandma' has taken me by surprise. They are all the best gifts ever given to me.
Whatever free time I have is spent with my nose in a book, surfing the web for new recipes, or with my wonderful friends, both online and "in person".
