I found this recipe on FB as Lauren's Latest and altered it to be a bit healthier without the sugar. I also left out the veggies to serve on the side. Due to the sodium in the ingredients (604mg per serving), I do not add salt to this recipe.

  1. In a large pot, saute onions and garlic in olive oil for 3 minutes or so over medium heat. Sprinkle plenty of salt and pepper over meat and stir into the hot pot. Brown thoroughly and stir in V8, tomato sauce, more salt & pepper, thyme. Bring to a boil and reduce heat to simmer. Cook covered 2 hours and 45 minutes or until meat is tender. Taste and adjust seasonings. Lots of salt, pepper depending on your taste. Serve hot over mashed potatoes.
