I created this when I was trying to come up with ideas for high-protein breakfast meals. I made it in an individual-sized serving, but I'm sure it could easily be multiplied to serve more than one person.

  1. Heat butter or olive oil in a medium skillet over medium-high heat.
  2. While skillet is heating, beat eggs and milk together until foamy.
  3. When skillet is hot, pour eggs into skillet and scramble until just beginning to set.
  4. Add cheese to eggs and continue cooking eggs to desired doneness.
  5. After the eggs are done, put them on a plate and continue to stir until the cheese is completely melted.
  6. Serve immediately.

Very good scrambled eggs, we enjoyed them and they were easy to put together. I doubled the recipe for the two of us and added salt and pepper. I followed the recipe exactly but the cheese cubes didn't melt on the plate, which wasn't terrible but next time I will leave them in the pan on the burner to melt the cheese. i used herb and garlic laughing cow cheese, gave them a lovely flavour! Thanks for posting i will be making these again.
