I managed to get my hands on some emmentaler and used it instead of the regular swiss. I followed the rest of the recipe exactly. Wow! It was scrumptious! I had never made a cheese fondue before, but recently vacationed in France and fell in love with it. This recipe came out creamy and smooth. Absolutely wonderful!

Swiss cheese doesn't work. It's too sticky and tends to ball. Go for the classic gruyere + emmentaler.

YUMMY! EASY! My two favorite in one! I used dry white wine, and added the nutmeg (just a few passes over the microplane). We dipped steamed broccoli, cauliflower, fresh mushrooms, and Portugese breadroll cubes. We used this as "sides" to our NYE dinner (flank steak pinwheels stuffed w/spinach). The kids loved it, too!

This recipe was easy to prepare. A couple tips that may help; always us good quality cheeses; when adding cheeses stir in a figure-8 motion to ensure they melt together properly; I added fresh chopped chives at the end. Yummy!
