Swiss Cheese and Cherry Spread

  1. Bring cheese and butter to room temperature Meanwhile, snip cherries and cover with boiling water and let stand 10 minutes.
  2. Drain well; pat cherries dry with paper towels and set aside.
  3. Place cheese, butter, mayo and mustard in a food-processor bowl.
  4. Cover and process till combined.
  5. Stir in cherries and green onions; cover and refrigerate.
  6. Serve with crackers or cocktail breads (rye or whole wheat is great).
  7. Makes about 2 cups.

I just made this recipe after finding it in one of my Better Homes and Gardens cookbooks. It was ok, I'm not sure I would make it again as the flavors didn't seem to meld well together.
