This fit what I had in the frig - chicken breasts and spinach, so I was pleasantly rewarded with a very nice salad which is a meal by itself. Great flavor and easy to prepare. Made for ZWT8.

This was outstanding in every way! Quick, delicious and left you looking forward to having it again. It's also a good recipe to take your own twist. Used the 2 oz of the dressing for marinating the chicken. While prepping the veggies, I drizzled some of the dressing over them. I sauteed the chicken strips in the oil and when cooked, added 1/2 bag of the spinach and didn't let it cook down at all. A quick stir and into the bowl it went. I proceeded to cook the balance of the spinach in small increments like that, drizzling the dressing in the hot pan before adding the spinach. This will be one of our favorite salads for the summer. This salad is a delicious meal in itself, and for us would make a nice quick Friday night supper, perhaps doing the marinade in the morning before leaving for work. Even my picky DH liked it. Made it pretty much as described, except for perhaps adding more chicken. Made for January Bev Tag 2008. Thanks, Mommy Diva!

This salad is a meal in itself. I made the dressing exactly as instructed except I omitted the cayenne pepper (personal preference). The chicken turned out moist and tender....excellent. It turned out beautifully for us and I can't wait to make it again. Thanks for sharing this winner, Mommy Diva.

Wow! My mouth is still burning a bit from this salad! I LOVE sweet and spicy and you will love this too if that's what you're into. The cayenne and the radishes give this a real KICK! I had everything save the mushrooms in this dish. I also used a different method in preparing. I marinated the chicken over night as directed. I tossed 2 tablespoons of the unused marinade in with the spinach, red peppers, onions and radishes. I then cooked the chicken with the marinade it had been mingling with and added the rest of the unused marinade. It created a thick sauce with the chicken. I plated my salad, and using tongs removed the cooked chicken from pan and placed on center of salad. Then I spooned the sauce from the pan directly over the chicken. It was wonderful!!! It's kinda warm today and I wanted a freasher taste, and am very glad I did it the way I did. I will definately make again!!
