I came across this recipe in one of my brother's old university books and kept it for use when I may need it ;)

Directions

  1. Mix together all the ingredients except the sweetcorn and oil until a smooth batter is brought about. Stir in the sweetcorn.
  2. Heat a bit of vegetable oil (tablespoon or two) in a frying pan and drop in tbsp sized balls of the mixture and fry for 3-4 minutes on either side until golden. Serve with a yoghurt dip such a raita.
