I came across this recipe in one of my brother's old university books and kept it for use when I may need it ;)
- 2 eggs
- 4 tablespoons milk
- 90 g self raising flour
- 1⁄2 teaspoon salt
- 275 g sweetcorn, drained
- vegetable oil (for frying)
- Mix together all the ingredients except the sweetcorn and oil until a smooth batter is brought about. Stir in the sweetcorn.
- Heat a bit of vegetable oil (tablespoon or two) in a frying pan and drop in tbsp sized balls of the mixture and fry for 3-4 minutes on either side until golden. Serve with a yoghurt dip such a raita.
When I made these tasty fritters, I formed 4 patties & served them that way! Another time I want to make them as directed & use them as finger food dippers! Simple & so easy to prepare! Many thanks! [Tagged, made & reviewed for one of my adoptees in the current Pick-A-Chef]
