  • Sift flour, baking powder, salt and pepper to taste into a bowl.
  • Add egg, mixing to combine.
  • Stir in sweetcorn.
  • Heat oil in a frying pan.
  • Drop tablespoonsful of corn mixture into pan.
  • Cook until golden then turn and cook the other side.
  • Drain on absorbent paper.
  • Serve hot.

  4. We so loved these sweetcorn fritters! Light and fluffy and a snitch to prepare. I didn't use all the cream corn as I felt it may have been too sloppy! It worked out perfect! We enjoyed these fritters with bacon and egg!! Thank you for sharing this recipe.

  1. Increase flour to one cup Add: - 1/2 to 1 can drained whole sweet corn - 1/2 tsp baking soda - pinch sugar Variations: - serve with maple syrup - add 1/4 tsp cumin and serve with salsa & sour cream Fun trick: To avoid frying, cook in takoyaki pan, mini waffle maker, or mini cupcake tin
