Treasured family recipe. Been eating this as long as I can remember. Really easy recipe, longest part is shredding the zucchini!
- Combine eggs, oil, sugar and zucchini.
- Mix in dry ingredients.
- Stir in chocolate chips, nuts and coconut.
- Bake at 350 degrees for about 1 hour.
Very good! Liked the coconut in this and the amount of cinnamon was perfect. Made for Spring 2014 PAC.
