      not bad, but totally didn't work out for me. i rolled the filling in the shell (but added more, because 2 Tbsp. wouldn't fill the tortilla), when i broiled them, all the filling spilled out all over the cookie sheet. i like the idea, but i'd have to play with it a lot to make it work out right

      I love the concept here and would definitely play with it some as the possibilities are endless. The ricotta and cinnamon filling was superb and would make a tasty treat in it's own right. That said, it felt as though the balance in the amount of filling to tortilla was out of balance with lots of shell and little on the inside, even when I added a couple of thinly sliced strawberries to the center. Again the idea is great and I think adding more filling might be the trick. Made for the I recommend Tag Game.

      Easy dessert to do when we want something quick. Next time I'll put less cinnamon. IT was too much. Made for ZWT 3

      Reviewed for ZWT III. I really enjoyed these tortillas for my brunch yesterday. They were easy to make and quite filling! I had no fat free ricotta so used low fat cream cheese instead and was happy with my substitution. Will make these again. Thanks!

      I made them just as suggested and found the flavor to be perfect!!! I loved the cinnamon, all 2 teaspoons (!!!)- and did not find it gritty at all. This is a variation on a way we often flavor ricotta for desserts...so I tried my version too - with splenda and a bit of cocoa. I used whole grain tortillas; I had a pack of something like 20. Both versions were quick, easy sweet treats...sort of like a mexi-cannoli (!!??) Like another reviewer stated; the variations are endless...you could add any berry or candy chip...I even cut some of mine into two or threes to make them more finger food and bite sized...lovely with coffee and enjoyed during ZWT3!!       Reviewed for ZWT3. This was terrific! But did you really mean two teaspoons of cinnamon? That made for WAY too strong a cinnamon taste for me; it left the ricotta gritty and almost bitter. I just kept adding more ricotta and sugar until the cinnamon was toned down. Made it with Joseph's flaxseed tortillas and it was really wonderful. I expect to play around with this in the future and add a variety of tastes and textures to it. Thanks for posting!
