From a low-fat cookbook. Haven't tried it yet but I like the way it sounds and I have all the ingredients in my home on a regular basis so this is posted for you and for safe keeping.
- 1⁄4 cup water
- 1 cup balsamic vinegar
- 1⁄8 cup Dijon mustard
- 1⁄4 cup lemon juice
- 2 teaspoons garlic, minced
- 1 1⁄2 teaspoons sugar
- 1 teaspoon dried parsley
- 1⁄4 teaspoon pepper
- Combine all ingredients in a food processor or blender and process until smooth.
- Refrigerate several hours before serving.
- Great on salads or can use as a marinade on chicken and fish.
This dressing is very strong, and you won't need much to spice up a salad. Next time I might add more mustard and a bit less vinegar. It turned out pretty good for a fat free dressing.
