Family Gathering Favorite. Kids love this sweet treat!!
- 4 cups of precooked rice, cooled
- 1 can pineapple tidbits
- 1 can fruit cocktail
- 1 (16 ounce) container Cool Whip
- 2 cups mini marshmallows
- 1 package vanilla pudding mix
- Drain juice form pineapple and fruit cocktail into a bowl.
- Pour in pudding mix and beat until ready.
- Pour in cool whip and stir.
- Stir in marshmallows, rice, pineapple and fruit cocktail.
I made this yesterday, as I had leftover rice in my fridge, and was looking for a rice dessert to make (my DH just loves rice in any form), it was simply wonderful. I omitted the fruit cocktail, and added more pineapple, cause I didn't have it in my pantry, also I didn't quite have 4 cups of rice, probably 3 cups, if that. Well, we enjoyed it so much, that everything was almost gone all in one night!...it is so delicious, easy to put together, and a very light dessert. I will be making this again. Thank you Erica for a delicious dessert recipe, this is a keeper. :-)
I love desserts with rice and this was one of my favorites. I left out the marshmallows because I am not a marshmallow fan. I definiately will be making this again. The pudding stayed fairly thin-maybe it was the amount of juice I had from the fruit. I used the Delmonte very cherry fruit cocktail. It gave it a nice cherry flavor.
This was really good! It's a great way to use up leftover rice, and so easy. I used 2 cups of rice and 12 oz. Cool Whip, and it was great. Thanks for posting.
