  • In a 2 quart microwave safe dish, layer in this order: sweet potatoes, salt, pineapple, pecans, brown sugar and half of the marshmallows.
  • Cover and microwave on high for 5 minutes or until the edges start to bubble.
  • Add remaining marshmallows and heat uncovered on high for 30 seconds, or until marshmallows start to puff.
  • Sprinkle the cinnamon and nutmeg over the top of the casserole.

  1. I liked the flavor of this dish as well as the quickness of making it, but I also thought it was too liquidy. Next time I will probably drain the pineapple and bake it in the oven and see if that helps to thicken it up. Made for PRMR.
     
  2. These were very good. However, I added about half the brown sugar, because as I was putting it all together, the two cups just seemed like way too much. They came out a little too liquidy, but the flavor was amazing. Will definitely be making this again.

  4. This recipe is WONDERFUL!! I used fresh sweet potatoes and steamed them in the microwave and then chunked them up before layering per the recipe. Fresh potatoes work great too with this dish. I also made a slight change by using chopped almonds in place of the pecans as a personal preference. This side dish is outstanding! I love this dish completely!!! Tagged in 123 Hit Wonders and I'm so glad I did!! Keeper for sure!
     
  5. I cut this recipe in half when I made it, but changed nothing else (well, except that I did toast the pecans)! I don't usually care for marshmallow topping on my SPs, but made an exception with this one because of the addition of the cinnamon & nutmeg! VERY, VERY TASTY DISH, & worthy of making again during the end-of-year holidays! Another time I might just try using steamed, unpeeled sweet potatoes, cut into bite-size pieces!
