      This was wonderful! I admit, I have never tried sweet potato soup before, and I was a little afraid to even try it, but I am so glad I did! I made it exactly as directed, using the vegetable stock, an entire jalapeno and the coconut milk options. Even my husband loved it and he despises anything with coconut. I only pureed half the soup so as to leave it with some texture.

      The flavor in the soup was very nice! The only things I did differently was to add the coconut instead of discarding and puree the soup with an immersion blender. I then garnished the soup and rice island with cilanto leaves. It made a lovely presentation. Thank you for a recipe I'm sure to use again and good luck in the contest!

      This was deeelicious! I love the name! i was worried that sweet potatoes & rice would be 'too starchy' but nooo...the rice added a nice textural contrast. The recipe didn't specify, but the soup asked me to puree it, so I did. LOVED it!

      The combination of flavours in this soup are really lovely, and it's definitely something I'll make again. However, when it came to assembling the soup and rice I did dither about the fact the soup wasn't pureed or blended, as I assumed it would be. I could envisage a mound of soggy rice surrounded by chunks of sweet potato (not really a soup) so in the end I did blend it. The only other changes I would make are to add extra chili - as I'm a bit of a heat fiend -and also a squeexe of fresh lime juice over each bowl when serving just to add a bit of extra zing.

      Very easy and very flavorful. the flavors blend together so beautifully with just the slightest hint of coconut. Yum!
