      This hit the spot for lunch on a lovely fall day thanks to three ovens. :) Doubled the curry and reduced milk to 1 1/2 cups. Easy and fast.

      This is really good!!!! I was a little short sweet potato so I added 2 baby bella mushrooms. I lift it nice and thick. I was particularly pleased at how quick it was to make this tasty soup.

      Made this using some homemade vegetable stock to keep it vegetarian for my son & DIL who lean that way, & then seasoned it with lemon pepper rather than the usual S&P! Used the coconut milk for the garnish & it was a big hit for all of us! Do love those sweet potatoes! Thanks for sharing the recipe! [Made & reviewed in Zaar Chef Alphabet Soup tag]
