I have not tried this recipe. I got this recipe from Switch Recipes. The recipe was posted by Kim H.
- 3 large yams
- 8 ounces refridgerated egg whites
- splenda sugar substitute
- cinnamon (optional) or nutmeg (optional)
- Peel and cook yams.
- Mash - add splenda and egg whites.
- Bake at 350 for 20 minutes.
- **You can also mix in nutmeg or cinnamon.
- Serve as a side dish or portion into 1/2 cup servings (approx. 4.7g protein) and freeze for later use.
