Sweet Potato Souffle

"I first tried this at a local fund raiser and decied to make it my self for Thanksgiving. it became a huge hit and everybody that tries it loves it, even if they are not huge sweet potato fans."

  • Drain the sweet potatoes and mix with the rest of the ingredients in a bowl beat until smooth and lump free. Pour into a 13 X 9 bake pan; cook at 350° for 35 minutes or until just barley firm. Serve warm out of the oven or cold.
  • Note: For an extra kick add 1Tlbs. of rum or rum extract to mix.

I love to cook, i learned a lot from my mother. I never saw her use a regular measuring cup. Everthing was some of this or a little of that. After she passed away it took me several tries to get her reciepe for chicken and dumplings. Hers were the best I have ever had even to this day mine are close but hers are stil the best. My dream would be to open my own diner and cook all day long. I have a reciepe for a very hot hot sause I plan to add to this site. A warning it is not for the meek and timed. It took me several batches to get it where I want it. I grew up in a real small town in Michigan and moved to Texas in 1978. Moved here for the heat...Love it hot. I also have developed a super hot wing reciepe, againg not for the meek. Currently I am a furniture salesman for Knight Furniture in Sherman Texas, The company has been in business since 1912. I currently make the birtthday cakes each month for our little birthday club. I love seeing people enjoy my cakes anmd other dishes.
