- 2 teaspoons active dry yeast
- 4 tablespoons honey
- 1⁄2 cup sweet potato puree
- 1⁄2 cup water (115 deg)
- 3 tablespoons butter (melted)
- 1 teaspoon salt
- 2 eggs
- 3 1⁄2 cups bread flour
directions
- Dissolve honey in water and add yeast allow to bloom 5 minute.
- Add sweet potato, butter, salt, eggs and flour 1 cup at a time. Mix until dough clings to the hook.
- Place dough on floured surface and knead about 1 minute until smooth.
- Place in oiled bowl cover and let rise 1 hours.
- Punch dough down and shape into balls place in lightly oiled pan.
- Let rise 1 more hour.
- Bake at 375 degrees f for 15 minute or until golden brown.
