    • 3 medium sweet potatoes
    • 1 large egg
    • 1 1/2 cups dried breadcrumbs
    • vegetable oil (for frying)
    • salt and pepper

    Directions:

      Bake the sweet potatoes until tender (about 45 minutess).

      Peel potatoes and mash them.
    3. 3
      add the egg and bread crumbs and mix well.

      drop by tablespoons into 360 degree vegetable oil until brown.

      season with salt and pepper.
