  1. Mix all ingredients.
  2. Pour into a greased baking dish.
  3. Bake for approximately 75 minutes at 350 degrees.

I was unsure of what to expect but the result was great. I did not add the coconut as i don't really enjoy it but I certainly enjoyed the texture of the polenta. Served with whipped cream - just terrific !

Very sweet - I wonder if that's because I used ordinary milk instead of buttermilk? I didn't know what pumpkin spice was so used cinnamon. Will buy some extra-thick double cream tomorrow to have with the leftovers - yum! Many thanks.
