Sweet Potato Polenta

"This recipe is an adoptee from the RecipeZaar account, and I haven't tried it yet. I will repost here when I have tried the recipe. I won't change the recipe, though...it seems that people like it the way it is. Enjoy!"

  • Bring the heavy cream and water to a boil.
  • Reduce heat to medium.
  • Slowly add the cornmeal, stirring constantly.
  • Cook over low heat for 15 minutes, stirring regularly.
  • Add pureed sweet potato, brown sugar and cheese, combine well.
  • Finish with a dab of butter and season with S+P.

  1. Mean Chef, this is really...the best polenta I have ever had in my entire life. I cant stop eating it. Dinner is over, and I keep going back to the pan and eating out of it... Im addicted lol Yummy definitely is the word!!!! This is POLENTA HEAVEN!!! The asiago really adds a nice flavor to it..its not too bold, but just a nice added flavor. Its not too sweet either! Its just P-E-R-F-E-C-T! This will be a regular around here... probably around the holidays! thanks so much!!!
     
  2. This took way longer than 35 minutes but it was worth it. The cream was too much, next time I'll milk. It could use a little kick, but not sure what the is, any suggestions? I'll make it again.
     
  3. This was fantastic. I grilled sliced portobello mushrooms and put them on top along with some crumbled bacon and sauteed onions, which really complimented it.
     
  4. I loved the combo of brown sugar, cheese, and sweet potatoes when I mixed them together in my processor. I kept going back and sampling. I did not like the dish as much when I added it to the polenta. I felt the sweet potato flavor got "muddied" by the polenta. In retrospect, I think it was the cream that took over the dish. I think I might try it again, but without the cream. I do think the butter at the end helped the flavor, so I wouldn't recommend skipping it. Roxygirl in Colo.
     
  5. Mom gives this one a 6! Great recipe! The whole family, including Ellie (19 months) loved it! Very creamy and delish! I even used whole milk instead of the cream, and it tasted so rich to this skim milk drinker! Wouldn't change a thing!

I wandered onto Recipezaar less than a year ago, looking for a lentil soup recipe. I'm pretty sure I haven't left the computer since then...I've been completely sucked in by this site! Of course, I do take the occasional break to actually cook the recipes I find. When I'm not at my computer or in the kitchen, I'm working toward my PhD in clinical psychology from Kent State. I also work as a therapist at the campus clinic, teach a class (Social Psychology this semester), and work as a research assistant. I'm a little bit busy. I do usually find time every day to cook something for myself with the help of this site, and to exercise (to counteract the effects of the great recipes I find here). I don't have much time in my life for hobbies at the moment (sigh), but I seem to recall that I used to like reading, going to see musical performances, and watching movies. I still do my best to travel as much as possible. My sister, Kate, my boyfriend, Jake, and my friend, Kris, are my favorite travel partners. Kate and I go on an "eatacation" every year.
