  1. Heat oil in a saucepan and sauté onions, mushrooms and garlic for 5 minutes.
  2. Add water, sweet potato, rice and spices. Bring to a simmer.
  3. Add the orzo and cover. Reduce heat and cook until all the liquid is absorbed. Remove from heat and fluff with a fork.
  4. Stir in scallions and serve hot.
