- 1 lb raw sweet potato
- 1⁄2 cup softened butter
- 1 cup sugar
- 1⁄2 cup milk
- 2 eggs
- 1⁄2 teaspoon ground nutmeg
- 1⁄2 teaspoon ground cinnamon
- 1 teaspoon vanilla
- 2 (9 inch) unbaked pie crusts
directions
- Boil potato and mash. Add butter, sugar, and spices. Beat eggs and mix with milk. Add to potato mixture. Add vanilla. Pour into pie crust and bake at 350 deg. for 55 to 60 minutes.

Very tasty - I could have drank the filling! But due to the amount of filling made, I believe that this recipe is for a 8 inch pie - it left my 9 inch a little empty.

I live in the country and my husband and I are retired. We do a lot of gardening, vegetables. We just celebrated our 50th wedding anniversary 8/28, 2005.
