Sweet Potato Pecan Bread Too

This recipe was inspired by Mikekey's Sweet Potato Pecan Bread (Abm). I had tagged his recipe to make until I found out a bread machine was needed. So here is my version made in the oven.

• Total Time: 1 hrs 5 mins
• Prep Time: 15 mins
• Cook Time: 50 mins

Ingredients:

Servings: 16

• ¾ cup sugar
• ½ cup milk
• 3 cups pancake mix (complete)
• 1 egg
• 1 ½ cups sweet potatoes (canned)
• 1 teaspoon cinnamon
• ½ teaspoon nutmeg (ground)
• ½ cup pecans (finely chopped)
• ¼ cup dried cherries
• 1 pat margarine

Directions:

1. Mix all of the ingredients together except the nuts and cherries with an electric mixer until well combined.
2. Fold in nuts & cherries.
3. Grease baking dish with margarine, discard extra.
4. Use a 9"x9" square baking dish.
5. Bake in 350° F oven for 50 minutes or until an inserted toothpick comes out clean.

Made this today for something sweet to follow our Sunday meal. I made it with a gluten free pancake mix and found that it altered the taste greatly. You couldn't taste the sweet potato or cinnamon in the recipe at all. I also drained my sweet potatoes before adding them and found there wasn't enough liquid in the batter. In all fairness I am going to remake this recipe with regular pancake mix before issuing stars. Recipe was made for the Feb.-Mar./Special Event Potluck Tag Game.

This is definitely a keeper of a recipe! We thoroughly enjoyed the flavor combo of the sweet potatoes, toasted pecans & dried cherries! I'm a huge fan of the raisin, did really liked the cherries in this particular loaf! I'm already making plans to make this again several times more before the December holidays!
