ingredients

• 1 1⁄4 cups whole wheat flour
• 1⁄4 cup ground flax seeds
• 2 1⁄4 teaspoons baking powder
• 2 teaspoons pumpkin pie spice
• 1⁄4 teaspoon salt
• 1 1⁄2 cups 2% low-fat milk
• 2 tablespoons brown sugar
• 1 tablespoon canola oil
• 2 teaspoons vanilla
• 2 eggs, lightly beaten
• 3⁄4 cup sweet potato, steamed and mashed

directions

1. Combine dry ingredients.
2. In blender, puree remaining (wet) ingredients.
3. Mix wet and dry ingredients.
4. Cook according to pancake skillet directions.
