• In a mixing bowl combine flour sugar, baking powder and salt. In another mixing bowl combine eggs, milk, sweet potatoes and butter. Add to flour mixture. Stir just until combined but still lumpy.
• Heat a lightly greased griddle or skillet over medium heat. For each pancake, pour about 1/4 cup batter onto the hot griddle.
• Cook over medium heat until pancakes are golden brown, turning to cook second sides when pancake surfaces are bubbly and edges are slightly dry, about 1-2 minutes per side.
• Serve immediately or keep warm in a loosely covered ovenproof dish in a 300 degree oven.
• Top with your favorite syrup.

1. This recipe was simple and came out delicious. I substituted the all purpose flower for wheat flour and used agave nectar instead of sugar. It still came out great. Thanks for sharing such an easy recipe to make. This was my first sweet potato pancakes. They're hard to find around here; only as menu specials.

2. Fabulous, and my 14 month old daughter (not much of an eater, normally) ate a TON. I loved them, too. Great recipe!

3. wonderful recipe. My daughter who hates sweet potatoes loves these pancakes.

4. Delicious! Except for using less than half the sugar scecified and adding some minced garlic and thyme, I made these exactly to the recipe and we were very pleased with how crispy a flavoursome they were. We enjoyed these with KITTENCAL's Recipe #149547 for a truly yummy vegetarian meal. Thanks for sharing this recipe. Made for 1-2-3 Hit Wonders.

5. Had leftover sweet potatoes and DS wanted pancakes this morning. He is autistic and I have to sneak veggies in any way possible. He ate 6 of them. Will use this again and it was pretty cheap to make. Everything was in the pantry.

Hi! My name is Terri. I have been happily married for 28 years to Jim. We have 3 children, 2 girls and 1 boy. I have a grandaughter, Delilah. She is 18 months old. We live in a rural area. We are animal lovers. We have 8 dogs, 6 cats, 2 rabbits and we have lots of ducks and geese. I love to cook and love to try new recipes. My favorite cookbook is an old Betty Crocker Cookbook that I have had before I was married. I like to sew, crochet and to do crafts. I am a 4-H Club Leader and I have a great group of kids this year. They keep me very busy and I wouldn't have it any other way. We do 3 fairs in the area. I also like to go to auctions, yard sales and I am always buying items from the kids that they are selling to raise money for school, church or a youth group. imghttp://i262.photobucket.com/albums/ii116/luecke/i-recommend-participant.jpg
