  • Cover peeled sliced potatoes with cool water. Refrigerate 20 minutes and drain.
  • Heat oil in skillet.
  • Add potatoes and saute, covered for 3 minutes over medium heat.
  • Uncover, raise heat and fry 5 minutes or until brown and crisp on both sides.
