A healthy alternative to the regular cottage fries.
- 4 cups sweet potatoes, peeled and sliced 1/4-inch
- 3 tablespoons oil
- 1 teaspoon salt
- black pepper, to taste
- Cover peeled sliced potatoes with cool water. Refrigerate 20 minutes and drain.
- Heat oil in skillet.
- Add potatoes and saute, covered for 3 minutes over medium heat.
- Uncover, raise heat and fry 5 minutes or until brown and crisp on both sides.
Very good. Goes well with chicken dishes.
