  • In a large skillet, fry bacon pieces over med-high heat until browned.
  • Add onion and peppers to skillet and saute until onions are golden to slightly browned.
  • Add white wine or broth to pan to deglaze. Add sweet potatoes. Stir to combine. Cover and cook over medium heat until sweet potatoes are softened.
  • Season with salt and Cajun seasoning.
  • Serve warm.
