  1. Heat a saucepan over low heat.
  2. Add butter and melt.
  3. Add onions.
  4. Saute' over medium-low heat until onion is soft and somewhat translucent.
  5. Do NOT brown.
  6. Remove from heat.
  7. Turn burner off.
  8. Preheat Peanut Oil or Vegetable Oil to 350 Degrees F.
  9. or to point where a drop of water will sizzle when placed in it.
  10. Peel and mash sweet potatoes in a large bowl.
  11. Add sauteed onion.
  12. Whisk eggs together.
  13. Add flour and sugar mixing in until smooth.
  14. Add salt, optional coconut.
  15. Combine with potato mixture.
  16. Spoon fritter mixture into hot oil by about 1/2 Tablespoons.
  17. Cook 5 or 6 fritters at a time.
  18. Cook fritters about 3 minutes on each side.
  19. Drain on rack or on paper towels.
