Sweet Potato - Cran-Apple Casserole

"A new and different way to eat sweet potatoes. This is a new twist on my Sweet Potato - Apple Casserole. I got so many rave reviews on Thanksgiving day about this great tasting dish. My recipe makes a lot so you can always cut the recipe in half."

  • Preheat oven 350°F.
  • Slice sweet potatoes 1/4 inch thick.
  • Wash and slice apples 1/4 inch thick. Put lemon juice on the apples.
  • Mix brown sugar, cinnamon and melted butter.
  • Alternate layers of sweet potatoes, apples, and cranberries, in a deep casserole dish. Put sugar mixture on top of each layer.
  • Bake 30 minutes.
  • While the casserole is baking it's time to mix the topping.
  • Cream butter, stir in flour, brown sugar, and almonds.
  • After baking for 30 minutes, take out of the oven and top with the toping. Put back in the oven and bake for another 20 to 30 minutes. Until golden.
