- 2 cups all-purpose flour
- 2 cups cornmeal
- 1⁄2 cup sugar
- 7 teaspoons baking powder
- 2 teaspoons salt
- 4 eggs, lightly beaten
- 3⁄4 cup milk
- 1⁄3 cup canola oil
- 2 2⁄3 cups sweet potatoes, cooked and mashed
Directions See How It's Made
- In a large bowl, combine the flour, cornmeal, sugar, baking powder, and salt.
- In a small bowl, combine the eggs, milk, oil, and sweet potatoes.
- Stir in the dry ingredients just until moistened.
- Pour into a greased 13x9x2" baking pan.
- Bake at 425 for 30 to 35 minutes or until a toothpick inserted near center comes out clean.
- Cut into squares.
- Serve warm.
