Sweet Potato Casserole With a "crunch"

"A very delicious sweet potato recipe with corn flake topping, rather than the usual flour mixture. Try it!"

• Ingredients: 12
• Serves: 6-8

ingredients

• 3 cups mashed sweet potatoes
• 6 tablespoons margarine, melted
• 1 1⁄2 cups sugar or 1 1/2 cups Splenda sugar substitute
• 1 cup evaporated milk or 1 cup skim milk
• 2 eggs or 2 egg substitute
• 1⁄2 teaspoon nutmeg
• 1⁄2 teaspoon vanilla
• 1⁄2 teaspoon cinnamon

• TOPPING

• 1⁄2 cup brown sugar, firmly packed
• 6 tablespoons margarine, melted
• 1 cup crushed corn flakes
• 1⁄2 cup coarsely chopped pecans

directions

1. Preheat oven to 400.
2. Mix all casserole ingredients and place in a small-medium glass baking dish.
3. Combine all topping ingredients, and cover the potatoes with the topping.
4. Bake for 15-20 minutes.
