  1. CAKE-------------------.
  2. Combine cooking oil and sugar and beat until smooth.
  3. Add egg yolks one at a time.
  4. Sift dry ingredients and add to first mixture alternately with water, beating well after each addition.
  5. Stir in potatoes, nuts and vanilla extract.
  6. Fold stiffly beaten egg whites into mixture.
  7. Pour batter into 3 greased and floured 8-inch cake pans.
  8. Bake for 25 to 30 minutes at 350 degrees F.
  9. Cool and frost.
  10. FILLING-----------------------.
  11. Combine milk, sugar, egg yolks, margarine, and vanilla extract in a saucepan.
  12. Cook over medium heat about 12 minutes, stirring constantly until mixture thickens.
  13. Remove from heat and add coconut.
  14. Beat until cool and of a spreading consistency.

This recipe is a keeper. My fiance' and I baked this for our family during the Thanksgiving holiday for the first time. We almost missed out on tasting it. The taste is amazing and I have baked it twice since then. Thanks soooo much for this recipe.

I love this cake! I first had it when I was a teen,I never got the recipe for it, and whenever I would ask someone about a sweet potato CAKE they would look at me like I was crazy :) The one I had back then had frosting made with sweetened condensed milk and coconut, I like this version much better. All of my friends demaned the recipe!
