Excellant quick bread!! This turned out so flavorful and moist ~ just perfect! I used half whole wheat flour, and only 3/4 cup of sugar, which was plenty sweet for us considering the sweet potatoes are...uh... sweet. I used a tablespoon of pumpkin pie spice in place of all the spices. Thanks for a great recipe!! I'll make this again =)

  1. In a large bowl, combine the first eight ingredients. In a small bowl, wihsk eggs, sweet potatoes, oil and orange juice. Stir into dry ingredients just until moistened. Fold in pecans. Transfer to a greased 9 x 5 x 2 inch loaf pan. Bake at 350 for 60-65 minutes or until toothpick inserted near center comes out clean. Cool 10 minutes before removing from pan to a wire rack.
