Sweet Potato, Apple, and Cranberry Bake

I have never tried this recipe, but my mom got it from a co-worker. It is supposed to be really good, so we are going to try it soon.

  1. Put sweet potatoes in a large saucepan.
  2. Add enough water to cover the potatoes.
  3. Bring to a boil; cover and cook until potatoes are'fork' tender.
  4. Cool slightly.
  5. Combine water, sugar, and cranberries in a medium saucepan.
  6. Cook until cranberries pop.
  7. Preheat oven to 350 degrees.
  8. Grease a 13" X 9" X 2" baking dish.
  9. Layer the sweet potatoes, apple slices, and cooked cranberries in baking dish.
  10. Sprinkle with brown sugar, cinnamon, and butter.
  11. Pour water (or orange juice) over top.
  12. Last, the peacon halves on top.
  13. Bake in oven for 30 minutes or until tender.

Like another reviewer, I made this for Thanksgiving and it was a huge hit. My brother-in-law said this was the best sweet potato dish he'd ever had, and I'm inclined to agree. It's a wonderful mix of sweet and tangy. Definitely a keeper!

Made this last year and was requested to bring it for Thanksgiving this year. It is delicious! Mouth-watering flavor. I will use it throughout this holiday season. It is easy to do and not too time-consuming. But worth every minute of one's efforts.
