A nice light side to go with chicken, fish, or steak. Looks very pretty when a mix of different color peppers is used. You can add a little chopped garlic to the water or fresh herbs to garnish for some extra flavor.

  1. Bring water to boil in pan and add orzo. Cook for 7 minutes.
  2. Add peppers and continue cooking for about 2 - 3 minutes until orzo is done to your liking.
  3. Remove 3 T of the cooking water and set aside. Drain orzo.
  4. In bowl add olive oil and the reserved water to the orzo and salt and pepper to taste.
