This easy soup can be made with any type of large sweet onion if Vidalias aren't available. We like it plain but you could top it with a toasted baugette slice topped with melted cheese if you prefer.
- 2 lbs vidalia onions or 2 lbs other sweet onions
- 2 tablespoons olive oil
- 6 cups beef broth
- 1⁄2 cup dry wine
- 1 bay leaf
- 1 1⁄2 teaspoons paprika
- salt and pepper
- Thinly slice onions. In a soup pot heat the olive oil on medium. Add the onions and sauté for ½ hour.
- Add the paprika, broth, wine and the bay leaf.
- Simmer for 30 – 40 minutes, remove the bay leaf and add salt and pepper to taste.
