My mom used to prepare this for us when we were kids. It's good on summer days as a snack or main course.
- Prepare macaroni according to package instructions.
- (You can substitute seashell pasta, anything up to bowtie pasta size, if you like. But please don't use long pastas like spaghetti or fettucini-- they just don't work with this.) Combine cottage cheese, sugar, and cinnamon with drained macaroni.
- Taste and add sugar/cinnamon, if necessary.
- Serve immediately.
What a surprisingly great recipe! I thought it might be too sweet, but the cottage cheese and sugar went very well together. A great packed lunch item because it tasted just as good cold :) Thanks!
