Sweet Lite Fluffy Stuff

"This is a recipe that my friend Roxanne shared with me at lunch one day that she made up herself. It's a nice lite recipe when you're craving something cool and kinda sweet but not fattening. Simple and easy too! Give it a try!"

  • Let cool whip come to room temperature.
  • In a bowl, mix together cool whip, cottage cheese, dry jello (Do Not Add Water), and pineapple.
  • Stir well.
  • Cover and chill in refrigator til ready to serve.

  1. We love, love, love this recipe. We do add a large can of mandarin oranges diced up to this, we drain the oranges then dice and throw right in the mix. We have made a cherry version with cherry jello and sweet cherries, and strawberry mix.... they both rock too. You can do raspberry too but I havent made that yet.
     
  2. I've really struggled with how to rate this. I think it's the texture that made the final decision for me. At first it sort of tasted like that pineapple cottege cheese you can buy in the grocery store and that was fine with me as I love the stuff. No one else in the family would touch the stuff but that's because they don't like sweet cottage cheese so they don't count. Trouble was that as I continued to try it I found the jello to really be almost overly sweet and even though I tried mixing more - still kind of a fine grit to it, and the more I tried the less I liked the texture. I think if I do it again, I'd cut the amount of the jello in half and see if that would help. That said it was pretty, lite and in small amounts enjoyable. I could see it made with strawberry jello too. Thanks Marsha for posting.
     
  3. This recipe is so good. 43 yesrs ago MY mother in law woulld make this, put in a cold thermos and take it to school for her lunch. I thought it was delicious but could never get my family to eat it. They didn't like the texture.

  5. This is so good, that I almost ate the whole thing myself. :) But I had help from my family. This is super easy to prepare, and it is low cal, light and yummy. I can see this getting made a lot, with different flavors, I used cherry this time. Thank you Marsha for posting.
