Sweet Heat Peanut Chicken

"This is one of those recipes that become an old standby. I double the sauce and throw it over a large package of chicken, divide and freeze to cook later. I freeze them in small packages so when we go camping all I have to do is grill at the lake. No fuss or cleanup."

ingredients

• 78.78 ml peanut butter
• 59.14 ml sweet chili sauce
• 29.58 ml lime juice
• 2 garlic cloves (crushed)
• 4.92 ml ginger (grated)
• 44.37 ml water
• 6 chicken breasts

directions

1. Mix everything in a bowl.
2. Add chicken to coat on all sides.
3. Preheat grill to medium.
4. Cook on a greased grill 20 minutes.

Hey Fairy Godmother - your friends in Moose Jaw loved this recipe. They suggested next time I brown the chicken in a frying pan then cook in the sauce so they would have sauce for over rice. I was thinking it would be really good with sauted peppers as well.
