This also makes a great dipping sauce for barbecued fruit.
- 4 ounces caster sugar or 4 ounces superfine sugar
- 10 fluid ounces water
- 6 tablespoons white rum
- 1 oranges or 1 large lemon, grated rind of and juice of
- 4 tablespoons honey
- Place all the ingredients in a saucepan and slowly bring to simmering point, stirring constantly, until the sugar dissolves.
- Bring to the boil, then boil rapidly for 15 minutes.
- Store refrigerated.
