Given to me by my neighbor. I have yet to make it, but I've heard great things about this pie! My neighbor makes this with a lattice crust top, or you could just top it with a second crust, topped with large sugar crystals. Either way, you need pastry for two pie crusts.
- 2 pie crusts
- 3 1⁄2 cups rhubarb, finely diced
- 1 cup sugar
- 1⁄3 cup flour
- 1⁄4 teaspoon salt
- 1⁄2 cup whipping cream
- 1 egg
- Line a deep dish pie plate with 1 crust. Fill with rhubarb. Mix flour, sugar, salt, cream and egg together in large bowl. Pour over rhubarb. Top with second crust and crimp edges.
- Bake 15 mins at 425*F, reduce heat to 350*F and bake an additional 25 minutes.
