Sweet Corn Salsa
"This was a recipe givin to me by a friend. I am always asked to bring this to Potlucks, Family Get togethers, and Cookouts. Great for a Summertime Dip! Make this the NIGHT BEFORE your event so it can chill Overnight. Serve with Corn Chips"

ingredients
- 2 (8 ounce) cans water chestnuts
- 1 cup white vinegar
- 1 cup sugar
- 1⁄2 cup canola oil
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 medium red onion
- 10 -12 green onions
- 1 (7 ounce) can white shoepeg corn
- 2 (15 1/4 ounce) cans sweet whole kernel corn
- 1⁄2 bunch cilantro (optional)
directions
- Chop all the peppers and onions to about the size of a corn kernel.
- Dice the Water Chestnuts.
- If using the Cilantro chop up very fine.
- Put ALL ingredients into a mixing bowl, mix well by hand.
- This needs Alot of time to chill so Cover and Chill Overnight.

I joined the Bargain Basement Tag game just recently to try and help me search for recipes that i might never think of trying. Im so glad I did. If you haven't figured it out yet, I have a mild obsession (ok, its not mild) with Cows..In fact, my dogs even look like little cows! I love to Collect them, and best of all Eat them! YUM!
Other than the Cows, my dogs are my life. I have 2 Pitbulls, Both girls.. the biggest love bugs in the world. Jenibelle is the oldest and mom to Claire. Claire was a Special Needs Puppy and almost died when she was less than 3 weeks old. She had Septicemia and is ok now but still a little bit "slow". I wouldn't replace her for the world. Both are, as I like to say, Aggressively Friendly. They love nothing more than to be loved :)

I work at a Casino in Las Vegas, and while I dont consider myself to be a gambler, my once vice is playing BINGO. I love me some BINGO!! I also run the Powerball Group at work. In Nevada we dont have a Lottery so every 5 weeks I collect the cash and drive to Arizona and pick up our group ticket. I have already made my retirement plans so now its just a matter of time. Im a patient person :)
