- 6 cups fresh corn kernels (about 8 ears)
- 3 cups green cabbage, chopped
- 1 cup red bell pepper, chopped
- 1 cup cider vinegar
- 1⁄2 cup sugar
- 1⁄2 cup shallot, chopped (about 2 large)
- 2 teaspoons celery seeds
- 2 teaspoons mustard seeds
- 1 teaspoon salt
- 1 teaspoon cumin seed
- 1⁄2 teaspoon ground turmeric
- 1⁄8 teaspoon crushed red pepper
directions
- Combine all ingredients in a Dutch oven; bring to a boil. Reduce heat; simmer, uncovered, 20 minutes or until vegetables are tender and most of liquid evaporates, stirring frequently.
- Cool; pour into airtight containers.
- Note: Refrigerate relish in airtight containers for up to six weeks.

<p>Hello all, being from California, I can honestly say I am a foodie. You can walk by construction workers here and hear them saying things like, So I used some fresh garlic and olive oil, then threw the rest into the pan to sautee. LOL I love all kinds of food, and trying to eat healthier as I get older, but still indulge in the occasional deep-fried food or sweet. <br />I LOVE this site! I have 3 or 4 other food sites such as Epicurious and Food Network, but I always come back here!
